Spaghetti Squash Au Gratin

This was surprisingly delicious! I didn’t think I was going to like it, but I will definitely be making it again. Instead of microwaving my spaghetti squash, I roasted it with a drizzle of olive oil and salt and pepper and cooked it skin side up in a 400* oven for 45 minutes. Once it cooled down a bit, I scraped out the insides and then added it to the other ingredients as directed. I didn’t have any cheddar cheese, so I used a combination of Monterey Jack and Gruyere.
