  1. Heat olive oil in a skillet over medium-high heat. Saute onion and garlic until onion is translucent, about 5 minutes. Add jackfruit; saute until heated through, 2 to 3 minutes. Add salsa and taco seasoning; cook and stir until flavors combine, about 2 minutes more.
