  1. Preheat a panini press to medium-high heat and lightly grease the surface with butter.
  2. Spread Dijon mustard on ciabatta rolls. Layer Brie cheese, cranberry sauce, and spinach leaves over bottom halves. Top with the other halves.
  3. Grill sandwiches in the prepared panini press until cheese is melted and rolls are golden brown, about 5 minutes.

This panini has a light flavor that went well alongside a salad. I used canned whole berry cranberry sauce and Gray Poupon mustard. The cranberries and Brie complemented each other well.
