  • Heat oil in a skillet over medium-high heat. Add turkey, onion, and red bell pepper. Saute until pepper is soft and turkey is no long pink, 6 to 8 minutes.

  • Combine water, diced tomatoes, tomato sauce, lentils, carrots, barley, bouillon, salt, Italian seasoning, black pepper, and cayenne pepper in a large pot over medium-high heat. Add the sauteed turkey mixture. Bring to a boil. Reduce heat and simmer, covered, until lentils are tender and flavors are blended, about 1 hour.

Delicious! A great way to “stretch” one package of ground turkey to feed quite a few people. I will definitely make this again. The only change I would make, would be to reduce to bouillon cubes to 4, and delete the additional salt, as the stew was a bit too salty for me. Read More

I substituted diced chicken thighs and chicken broth for the turkey, bullion and water, diced fresh tomatoes and a small can of paste for the canned tomatoes and sauce, and doubled the lentils because I didn't have barley. Improvise, adapt, and overcome, lol. Came out great, shared with a couple neighbors and they did too. Read More
