  1. Preheat oven to 400 degrees F (200 degrees C). Lightly coat a muffin tin with oil.
  2. Heat coconut oil in a skillet over medium-high heat. Add mushrooms and onion; saute until tender, about 5 minutes. Transfer to a bowl.
  3. Line 8 muffin cups with 1 slice of ham each. Place a spoonful of mushroom mixture in each cup and crack 1 egg on top.
  4. Bake in the preheated oven until egg whites are completely set, about 15 minutes. Top with black pepper.

I added grated cheese instead of mushroom and onions on top of the ham, and then added pepper and parsley flakes on top of the eggs when I baked them. It is delicious.

Made this and was extremely pleased with the outcome but I changed some things. I whisked the eggs and spooned them in the ham lined muffin cups over the mushroom/onion mix. Baked until eggs ...

So yummy. I added some chopped cappicola ham to the onion and mushroom. Scrambled the egg and sprinkled a little cheese on top. Cooked for 20 minutes. Will make again!

I like to do this when we have company for breakfast. If you don't have coconut oil don't run to the store. Vegetable oil or olive oil works just fine.

Easy and delicious. I will definitely make this recipe again. I substituted sauteed zucchini and onion for the mushrooms since we don't eat them.
