  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.

  • Reheat turkey stock in a separate pot over medium-low heat. Stir in gravy and soy sauce.

  • Combine 1/4 of the noodles, 1 1/2 cups broth mixture, and 1/2 cup chopped turkey in a bowl; repeat with remaining noodles, broth, and turkey.

Cook's Note:

Use any leftover stock and gravy you have on hand. I had made Allrecipes' Make-Ahead Turkey Gravy.

This one is hard to rate for me. First let me say that the color of the broth is absolutely stunning. The bowl I chose to photograph it in did not show it off but trust me it is gorgeous. Such a deep golden yellow that you can't wait to dig in. Where I think the recipe could use some improvement is that I felt it needs a veggie of some sort. Any veggie really. Not just for color but for additional texture too. I can think of many veggies that would go good in this but in keeping things simple a handful of frozen pea/carrot mix thrown in would do the trick nicely. After tasting this I decided a few squeezes of Sriracha was necessary for me too but that is just my preference. This is a super simple recipe and a great way to use up leftovers.
