  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.

  • Slice English muffins in half and toast in a toaster.

  • Lay halved English muffins on the prepared baking sheet; spread 1 tablespoon pizza sauce on each. Sprinkle olives, mushrooms, tomato, red bell pepper, and green bell pepper onto muffins. Top with vegan cheese.

  • Bake in the preheated oven until cheese is warm and melty, about 10 minutes.

These were fun and I would make again. I scaled the recipe back because there is only two of us. So instead of buying two different bell peppers and having leftover of each I just bought a green one and used that. I chopped up a roma tomato but when you start assembling the pizza's you run out of room quick. Hubs likes tomato products but does not care for tomatoes on their own so I ended up just leaving them off. I honestly do not think they are necessary other than to add another fresh element. With that being said you could use fresh mushrooms instead of can. Regardless these were fast fun and easy and I would make again. Read More
