Tamales Oaxaqueños (Oaxacan-Style Tamales)
Wrapping tamales in banana leaves gives them a wonderful flavor, even though the leaves themselves are not eaten. To prepare the leaves, rinse and wipe them dry. To soften them, pass each one over the low flame of a gas range. Alternatively, you can arrange them on a baking sheet in a single layer, or slightly overlapping, and heat in a 200-degree oven for 5 to 10 minutes.
