  • Preheat the oven to 375 degrees F (190 degrees C).

  • Melt cream cheese and butter in a saucepan over medium heat. Mix well. Add flour and milk; stir well. Cook, stirring constantly, until thickened, 6 to 8 minutes.

  • Remove saucepan from heat; add corn, green chiles, salt, and pepper. Mix well. Pour into a casserole dish.

  • Bake in the preheated oven until bubbly, 30 to 40 minutes.

3.25.20 I think this may be the first time I’ve ever tried to melt softened cream cheese. Even the butter didn’t help, it just wouldn’t melt. The best I could do was smash it into smaller pieces. I used Green Giant® Steam Crisp white corn, and it really had next to no liquid in the can, very little to drain. I had a glob of cream cheese when I added the flour-milk mixture to the skillet, and just had to add more and more and MORE milk to even come close to getting anything that resembled a sauce. My husband’s comment was that this tasted pretty good, but just wasn’t “creamy.” It is super quick and easy to make, and it’s tasty, but it does need a little tweaking.
