I didn’t have asparagus on hand so I made it without. We loved this dish and will be making it again. It really is satisfying and enjoyable like it’s high carb sister. I added more cream until it got to the consistency I wanted. I think the kind of Parmesan used can make a difference on how sticky it is. Great recipe!

This was such a nice side dish for our grilled chicken. I actually had some leftover regular risotto that I wanted to lighten up and this turned out great. I just mixed in my leftover risotto at the end! So I guess it turned out lower carb at least!
