Endive Boats with Apple, Blue Cheese, and Hazelnuts

"I got this recipe from my friend Heather who served it at her New Year's party a few years ago and I have made it many, many times since. This recipe makes enough for 2 large platters so it's perfect when entertaining a crowd."

  1. Combine Gorgonzola cheese, apple, celery, mayonnaise, and lemon juice in a bowl and season with salt.
  2. Separate endives into individual leaves and lay out on a serving platter. Spoon about 1 to 2 teaspoons of Gorgonzola mixture onto each leaf and sprinkle with roasted hazelnuts.

Very different, but we like blue cheeses. Enjoyed the complicated flavors. Really nice.
