View All Saved Items Rate Print Share Share Tweet Pin Email Prep Time: 10 mins Cook Time: 5 mins Total Time: 15 mins Servings: 10 Yield: 10 servings Jump to Nutrition Facts Ingredients 1 ½ cups all-purpose flour 6 tablespoons white sugar 2 teaspoons baking powder ¼ teaspoon salt 1 ¼ cups fat-free milk 2 eggs, lightly beaten ¼ cup chunky peanut butter 1 teaspoon roasted peanut oil ½ teaspoon vanilla extract 1 pound crispy cooked bacon strips, broken into fourths Directions Combine flour, sugar, baking powder, and salt in a large bowl. Mix milk, eggs, peanut butter, peanut oil, and vanilla extract together in a separate bowl. Pour into the flour mixture; stir batter until smooth. Heat a nonstick griddle or skillet over medium-high heat. Drop about 1/4 cup batter onto the griddle. Sprinkle a few bacon pieces on top. Cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter. Cook's Note: Vegetable oil may be substituted for the peanut oil.
