Ingredients

  • 1 ½ cups all-purpose flour

  • 6 tablespoons white sugar

  • 2 teaspoons baking powder

  • ¼ teaspoon salt

  • 1 ¼ cups fat-free milk

  • 2 eggs, lightly beaten

  • ¼ cup chunky peanut butter

  • 1 teaspoon roasted peanut oil

  • ½ teaspoon vanilla extract

  • 1 pound crispy cooked bacon strips, broken into fourths

Directions

  1. Combine flour, sugar, baking powder, and salt in a large bowl.

  2. Mix milk, eggs, peanut butter, peanut oil, and vanilla extract together in a separate bowl. Pour into the flour mixture; stir batter until smooth.

  3. Heat a nonstick griddle or skillet over medium-high heat. Drop about 1/4 cup batter onto the griddle. Sprinkle a few bacon pieces on top. Cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

Cook's Note:

Vegetable oil may be substituted for the peanut oil.
