  1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat (such as Silpat(R)).
  2. Mix peanut butter, vanilla extract, sugar substitute, and egg together in a bowl. Drop 16 spoonfuls of dough an inch apart onto the prepared baking sheet.
  3. Bake until set, about 12 minutes.
