  1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat (such as Silpat(R)).
  2. Mix peanut butter, vanilla extract, sugar substitute, and egg together in a bowl. Drop 16 spoonfuls of dough an inch apart onto the prepared baking sheet.
  3. Bake until set, about 12 minutes.

As written, there is no way to have the low carb numbers. There are 4 grams of carbs in a teaspoon of natural sugar sweetener which at one cup and 12 cookies would be 192 carbs. Anyhoo, I migh...
