I've been making chicken fajitas on the stove with packaged taco seasoning for years but always had so much clean up afterwards. This was not only better tasting, but also easier to clean up and way more satisfying! Serve with warm tortillas, sour cream, and shredded cheese. Taco sauce optional.

  • Preheat oven to 400 degrees F (200 degrees C).

  • Drizzle 2 tablespoons olive oil over the bottom of a 10x14 glass dish. Add chicken strips.

  • Combine remaining 2 tablespoons olive oil, garlic granules, chili powder, oregano, and cumin in a small bowl. Rub mixture over the chicken. Add tomatoes, onion, green bell pepper, red bell pepper, and green chiles. Mix thoroughly. Sprinkle with seasoned salt.

  • Bake in the preheated oven, uncovered, until chicken is no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This is certainly very easy! And tasty too! The only thing I'd have wished was for a bit more flavor. I followed the recipe even using a little more seasoning than called for but it needed a little more spice for us. I will use the leftovers and will make it as a quesadilla with all the extra ingredients---the sour cream a spicy salsa and some cheese. I would make this again for sure. Thanks for the recipe! These were really quick and easy, even tasty. The only issue I had was with the temperature. The vegetables on top started to burn after 20 minutes and when the veggies were done, the chicken was a bit dry. It could be my oven, next time I will turn it down a notch. Read More

I don't usually add tomatoes to my fajitas but I really loved this. The spice mix on this is so great. It has lots of flavor without being spicy. This is going on my meal plan since it's such an easy dinner idea for busy weeknights. I added some extra bell peppers to make a little bit more since I have a teen who eats so much all of a sudden. The canned tomatoes for chili scared me, but they were delicious in this recipe. I used more than a pound of chicken but less than 2 pounds; however, I used all the spice mixture. Just enough seasoning but not hot. I also used the whole can of tomatoes minus some juice and all the green chilies. This is an easy meal to prep and cook.
