  1. Preheat a griddle over low heat.
  2. Spread 2 tablespoons fig jelly on a tortilla; place on the griddle. Top with half the jalapenos and 1/4 cup mozzarella cheese; cover with a tortilla. Cook for 5 minutes; flip and cook until cheese is melted, about 2 minutes. Repeat for second quesadilla.


  • Cook's Note:
  • You can use fresh figs rather than fig jelly to get the same results.
