  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Poke holes all over potatoes with a fork. Arrange in a baking dish.
  3. Bake in preheated oven until potatoes are easily pierced with a knife, about 45 minutes.
  4. Cut potatoes in half, widthwise, on a cutting board. Scoop flesh into a mixing bowl. Add coconut milk, lime juice, salt and pepper to taste. Beat with an electric mixer until smooth.

I loved this recipe. Purple sweet potatoes have a unique flavor all their own and before finding this recipe I only liked them boiled and mashed with butter. I made this once with less lime juic...

Had to throw this out, I made it with canned coconut milk, maybe it was supposed to be sweetened coconut milk but the acidity of the lime made it taste like bile. I do wish I would have tried it...
