  1. Cook the rice according to package instructions. Transfer the rice into a medium bowl and let cool till warm to the touch (not hot).
  2. Add the carrots, peas, and tuna to the rice. Gently fold to incorporate all the ingredients together.
  3. Fill each lettuce cup with about 1/2 cup of the rice mixture.
  4. Serve immediately.

Great, easy to make healthy lunch or dinner. It was a little dry so I mixed in some creamy poppyseed dressing and that made it perfect! You can add anything you want to these! Will make again!
