I came up with this quick, easy pizza when we had run out of our frozen supply. I loved it! It's a delicious, thin-crust, easy pizza that will leave you satisfied. Feel free to substitute your own spice and/or topping choices - there are many variations!

Directions

  • Preheat oven to 400 degrees F (200 degrees C).

  • Heat garlic oil and butter in a skillet over medium heat. Add mushrooms; cook and stir until dark and tender, about 5 minutes.

  • Place tortilla on a pizza pan or baking stone. Spoon mushrooms, with accumulated juices, on top. Scatter mozzarella cheese and cherry tomatoes over mushrooms. Sprinkle oregano and garlic on top. Drizzle olive oil on top.

  • Bake in the preheated oven until edges of the tortilla start to brown, 8 to 10 minutes.

Cook's Note:

If oil does not completely coat mushrooms in step 2, add up to 1/4 cup water.

Excellent! I had fresh oregano from my garden and I always use fresh over dried when I can. At the last second before this went in the oven I decided to sprinkle some crushed red chile flakes over the top and that was a good move too if you like spicy. This came out perfect and looked like something you'd get at a fancy restaurant. Even my husband was bragging on the way it looked. I told him that it didn't have meat on it and he said it looked so delicious that he didn't even notice. This one is a keeper! Read More
