Ingredients

  • 1 cup cornmeal

  • 1 cup all-purpose flour

  • cup white sugar

  • 2 ½ teaspoons baking powder

  • ¼ teaspoon salt

  • 1 cup buttermilk

  • 6 tablespoons unsalted butter, melted

  • 1 egg, beaten

  • 1 ½ cups fresh blueberries

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin.

  2. Mix cornmeal, flour, sugar, baking powder, and salt together in a large bowl. Stir in buttermilk, butter, and egg. Fold blueberries into the batter.

  3. Spoon batter into the prepared muffin tin.

  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.
