Variation: Do not chop the chives. Instead, cut fresh chives into 24 (1-inch-long) pieces. Top crackers with egg salad. Increase tomatoes to 12 grape tomatoes, each cut into 6 slices; arrange 3 tomato slices on one side of egg salad on each cracker to resemble daisy. Add chive pieces for the flower stems, and spinach for the leaves.
