  1. Combine chicken, onion, eggs, pickle relish, mustard, paprika, and red pepper flakes in a bowl; stir in mayonnaise by spoonfuls until mixture holds together but isn't too moist. Season salad with salt and pepper.

  • Cook's Note:
  • If you puree the onion, drain off the liquid before adding to salad. This method gives a slightly more intense onion flavor. This is great on bagel chips, crostini, croissants, and in pita pockets.

Very quick and easy to make. I had everything on hand. I enjoyed the little bit of kick this recipe hand instead of the normal chicken salad.

I did make two substitutes but only because that is the ingredients on hand. I used spicy brown mustard and miracle whip. You need to let this set and the flavors meld before eating. I tried...
