  1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  2. Spread zucchini slices in 1 layer on the prepared baking sheet.
  3. Bake in the preheated oven until zucchini is tender, about 20 minutes.
  4. Spoon pizza sauce over each zucchini slice and top with pepperoni and mozzarella cheese. Sprinkle parsley over each.
  5. Bake in the preheated oven until cheese is melted, about 5 minutes more.

I used fresh parsley instead of the dry and these were pretty good. I do think they could have benefited from another spoon of pizza sauce over the pepperoni but that is just my opinion. I also ...
