Baked Zucchini Sticks

  1. Preheat oven to 375 degrees F (190 degrees C). Spray a dark baking sheet with cooking spray.
  2. Mix egg, water, and pepper together in a bowl. Combine bread crumbs, Parmesan cheese, parsley, garlic powder, and onion powder in a separate bowl.
  3. Dip zucchini sticks in egg mixture, allowing excess liquid to drip back into the bowl. Press coated sticks into the bread crumb mixture until fully coated. Arrange coated sticks on the prepared baking sheet in a single layer. Spray sticks with cooking spray.
  4. Bake in the preheated oven for 15 minutes. Carefully flip sticks, trying not to break the coating from the zucchini, and continue baking until lightly browned, about 10 minutes more. If not brown enough, turn on the oven's broiler and broil for 2 to 3 minutes.

  • Cook's Note:
  • As a variation, think of using Mexican spices such as cumin, chili powder, and red pepper flakes to really change the whole flavor of this dish. Serve with salsa and sour cream.

I had to cook them for twice the time, and they still didn't brown or crisp. Some of the sticks still weren't cooked through, and the flavor was lacking.

I turned out great. I used Panko bread crumbs it was all I had on hand (it makes it a lil crunchier) I added more parm but maybe will cut that out. I crave this sometimes and now I can make it. ...

Loved the flavor! Like that you can change the flavor depending on your meal.
