  • Preheat oven to 375 degrees F (190 degrees C). Spray a dark baking sheet with cooking spray.

  • Mix egg, water, and pepper together in a bowl. Combine bread crumbs, Parmesan cheese, parsley, garlic powder, and onion powder in a separate bowl.

  • Dip zucchini sticks in egg mixture, allowing excess liquid to drip back into the bowl. Press coated sticks into the bread crumb mixture until fully coated. Arrange coated sticks on the prepared baking sheet in a single layer. Spray sticks with cooking spray.

  • Bake in the preheated oven for 15 minutes. Carefully flip sticks, trying not to break the coating from the zucchini, and continue baking until lightly browned, about 10 minutes more. If not brown enough, turn on the oven's broiler and broil for 2 to 3 minutes.

Cook's Note:

As a variation, think of using Mexican spices such as cumin, chili powder, and red pepper flakes to really change the whole flavor of this dish. Serve with salsa and sour cream.

As written these did not work for me. Sorry. Everything was coming along nicely until the flip and then it all went South. My breading stayed on but once they were flipped all of the crisp that I got on the bottom side turned to a wet mush. I'm confident if these were not flipped they would have turned out great. After all you've got the spray on the bottom and the top of them. Just my two cents. This is a healthier alternative to frying but I recommend leaving them as is on the baking sheet and no flipping. Less effort on your part too. Win/win! Read More

I turned out great. I used Panko bread crumbs it was all I had on hand (it makes it a lil crunchier) I added more parm but maybe will cut that out. I crave this sometimes and now I can make it. Thanks for the recipe Read More
