This is a great light meal or snack that can be made with minimum effort. You can also use flat pita bread or focaccias to make other types of delicious pizzas with just a little imagination. Serve with garlic yogurt and a Mediterranean salad.

  • Place 2 sheets of lavash on each baking sheet. Spread 1 1/2 teaspoon tomato paste over each sheet of lavash. Lay about 6 slices of salami over the tomato paste. Scatter cherry tomatoes, red onion, and black olives on top. Cover with mozzarella cheese.

  • Broil lavash in batches in the preheated oven until cheese is melted, 3 to 5 minutes.

Cook's Notes:

Other cheeses and salami may be substituted. Plain tomatoes may be thinly sliced and used instead of cherry tomatoes.

Be adventurous and experiment with other toppings such as chicken, mushrooms, arugula, spinach, Brie cheese, and shallots.

Great recipe that was not only simple but quick too. I used pita bread as the recipe submitter mentioned and also added some sliced mushrooms. I wanted a little acidity to mellow the tomato paste so I added a couple of banana pepper rings on the top. I know what I'll be doing with leftover pita bread from now on. The best part is that you can change up the toppings based on what you have on hand. Great recipe! Thanks for sharing! Read More
