  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.

  • Lay 2 ham slices in each muffin cup, overlapping the slices and pressing up the sides to take the shape of the cup.

  • Beat eggs in a bowl; season with salt and pepper. Add onion and beat well. Fill each ham cup 3/4 full with egg mixture; top each with Cheddar cheese and mozzarella cheese.

  • Bake in the preheated oven until egg is cooked through, 15 to 20 minutes. Cool for 5 minutes before serving.

Super simple great way to have take with you breakfast for the kids. I didn't add onions because I don't like them but n my eggs. However I did put a 1/2 English muffin in the bottom before adding the egg/cheese to give a more take and go ability to hold in your hand. I will be making these again the kids loved them. Read More

Great breakfast for low carb -ers. Easy too. I use just one slice of deli ham, and even though it's thin, and maybe even some holes in it, the egg firms up inside the "cup" and they hold their shape. Yum! Read More
