Pigs in a Blanket Pancake Muffins


Chunks of breakfast sausage are baked into these easy muffins. Serve with a drizzle of syrup!

  • 1 cup Hungry Jack® Buttermilk Pancake & Waffle Mix

  • cup milk

  • 2 eggs

  • 1 tablespoon vegetable oil

  • 1 tablespoon Hungry Jack® Original Syrup, plus more for serving if desired

  • 4 fully cooked sausage links


  1. Preheat oven to 350 degrees F.

  2. Add the pancake mix, milk, eggs, oil, and syrup to a medium mixing bowl and whisk to combine.

  3. Chop the cooked sausage links into small pieces and stir into the batter.

  4. Pour batter 2/3 full into a greased or lined muffin tin.

  5. Bake for 13 minutes or until a toothpick inserted comes out clean.

  6. Serve with extra syrup, as desired.
