Improvised Detox Salad

"I had planned to go on a 3-day juice detox but my juicer died the morning I was due to start so I was stuck with a whole load of fruit and veg. I threw together this salad using the ingredients that were to go into one of the juices. It turned out surprisingly yummy and looked gorgeous. This is definitely a salad for those who like their food on the tart side but the sweetness of the red apple balances it out nicely."

  1. Combine green apple, red apple, yellow bell pepper, cucumber, beet, and carrot in a large bowl. Stir in onion, broccoli stem, celery, and parsley. Add olive oil, lemon juice, salt, and pepper. Toss to mix well. Garnish with pine nuts.


  • Cook's Notes:
  • Next time I make this I will give it a Thai twist by replacing the parsley with cilantro and adding a finely sliced bird's eye chile pepper. This would go really well with Thai-style barbeque chicken or fish.
  • Substitute lime juice for the lemon juice if preferred.
  • Substitute toasted peanuts or pumpkin seeds for the pine nuts if desired.
