  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble into small pieces.

  • Combine cauliflower, heavy cream, butter, 1/2 teaspoon salt, 1/4 teaspoon pepper, and garlic powder in a pot; bring to a boil. Cook until cauliflower is soft, 18 to 20 minutes.

  • Transfer cauliflower mixture carefully to a food processor. Add crumbled bacon and smoked Gouda cheese; blend until smooth and creamy. Season with salt and pepper.

I do not have a food processor so I used my electric mixer. Otherwise I made no changes. It was tasty and a nice accompaniment to the Light Herb Pork Loin. I may try it again. Read More

I used regular gouda not smoked and doubled the cheese. It tastes pretty good but its not great. My family did not care for the texture. I doubt I'll make this again. Read More

We used regular gouda (not smoked) and it turned out wonderfully. I also had to simmer the cauliflower a tad longer than the recipe recommended. Reminds me of the gouda grits that I make only far healthier. Read More
