Chocolate Chunk Berry Brownies

Ingredients

  • ¾ cup turbinado sugar

  • ¼ cup cocoa powder

  • ½ cup gluten-free all purpose baking flour

  • 1 teaspoon baking powder

  • ½ cup egg substitute

  • ½ cup coconut oil, melted

  • 1 cup So Delicious® Dairy Free Vanilla Coconut Milk

  • 2 ounces dark chocolate, chopped into small chunks

  • 1 cup mixed frozen berries

Directions

  1. Preheat oven to 350 degrees and line a 9 x 9 inch baking pan with parchment paper.

  2. In a large bowl, whisk together the dry ingredients. Add egg substitute, Vanilla Coconutmilk and melted coconut oil. Gently fold the chocolate and berries into the batter.

  3. Pour batter into the pan and bake for 30 to 40 minutes or until a knife comes out clean. Sprinkle with powdered sugar, if desired.

Substitution:

You can use 2 whole eggs instead of 1/2 cup egg substitute.
