  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch round cake pan; line with parchment paper.

  • Whisk coconut sugar, oat flour, spelt flour, cocoa powder, baking soda, and salt together in a bowl. Pour in buttermilk, coconut oil, and vanilla extract; whisk until batter is well blended.

  • Pour batter into the prepared pan; smooth top with a rubber spatula.

  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Cool in the pan for 5 minutes. Invert onto a wire rack to cool completely, about 25 minutes.

I was looking for something to bake with oat flour and came across this recipe. I was really hesitant because there are no eggs in the batter, but it turned out ok. I didn't have spelt flour, so I used regular all-purpose flour instead. Overall, the cake turned out all right. At the 20mi mark it was still wet in the middle, and it was all done after 25min. It is dry and very crumbly. I rose a little bit, so I cut in half and used a rum syrup ( 1/4 cup of water, 1/4 cup of sugar brought to boil, then added 1tbs rum and 1tbs of vanilla) to sprinkle the 2 layers with. I also made a cream cheese buttercream ( 1 pack of cream cheese, 1 stick of butter and ~1.5 cups of sugar, 2 tbs of rum). It tastes better with the cream, otherwise it's just too dry for me.
