Directions

  • Melt 1 tablespoon butter in a large skillet. Add shallots and cook over medium heat for 5 minutes or until very soft, stirring frequently. Add Amazin Diced Prunes and cook for 5 minutes more.

  • Make a horizontal slit in each chicken breast to form a large pocket. Place equal amounts of onion mixture and a piece of cheese inside each breast and secure with toothpicks; season with salt and pepper. Brown chicken in remaining butter on both sides. Tent with foil and cook for 10 minutes over low heat, turning once or twice.

  • Stir together preserves and vinegar and pour over chicken. Cook for 10 to 15 minutes more or until chicken is cooked through and sauce is slightly thickened. Remove toothpicks and top with snipped fresh basil.

AMAZING! Seemed a little labor intensive but well worth it. If I make again it won't be so daunting. I used regular balsamic and made a "jam" out of dried prunes that I had. It was so good and easy once I got the chicken in the pan to cook. I wasn't super adept at using the toothpicks to seal in the filling and some of it leaked out during cooking. We scraped up the sauce and put over the top of the chicken when we ate it. The brie was simply delicious with the prunes. It had seemed that the filling wouldn't be a lot but it turned out to be slightly more than plenty which might be why some of it leaked out. Instead of tenting foil over my pan as chicken baked I put a lid on the pan. There was a fair amount of juice but it cooked down during the last step. Although my version may not have been perfect it sure tasted incredible. I'd highly recommend this dish. Read More

I made this for Valentine's Day. It was Great! I used regular Balsamic Vinegar instead of white. Otherwise I actually followed the recipe. I served it with garlic butter white rice and roasted butternut squash. Very yummy would highly recommend. Read More
