  1. Combine cabbage, mangoes, carrot, celery, and green onions in a large bowl; toss until mixed.
  2. Combine peanut butter, lime juice, water, soy sauce, cilantro, garlic, and ginger in a food processor; blend until smooth and the consistency of rich cream. Add 1 to 2 tablespoons water if dressing seems too thick.
  3. Pour dressing over cabbage mixture; toss to distribute evenly. Sprinkle chopped peanuts on top.

12.22.16 I had to add quite a bit of water to the thick dressing to get it to the right consistency, and it diluted the flavor, so I adjusted all the dressing seasonings. I was expecting more...
