Kitt's Oven-Roasted Zucchini


This oven-roasted zucchini with Italian bread crumbs and Parmesan cheese is juicy and delicious. It goes well with a variety of meat dishes.

  • 3 medium zucchini, cut into cubes

  • ¼ cup olive oil

  • 1 cup Italian-style bread crumbs

  • ½ cup grated Parmesan cheese

  • 1 tablespoon minced garlic

  • salt and ground black pepper to taste


  1. Preheat the oven to 400 degrees F (200 degrees C).

  2. Place zucchini into a nonstick baking dish and drizzle oil over top. Add bread crumbs, Parmesan, garlic, salt, and pepper; mix until well combined.

  3. Bake in the preheated oven, stirring every 10 to 15 minutes, until zucchini is tender and cheese is melted, about 40 minutes.
