  1. Preheat oven to 375 degrees F.
  2. Cook turkey, Green Giant® Riced Cauliflower & Sweet Potato, onion, garlic and salt in a large nonstick skillet over medium-high heat 10 minutes, stirring occasionally, until turkey is no longer pink and vegetables are tender.
  3. Stir in 1 cup mozzarella, 1 cup sauce, Parmesan cheese and Italian seasoning.
  4. Arrange pepper halves in 3-quart baking dish.
  5. Evenly fill peppers with turkey mixture. Top each pepper with remaining sauce.
  6. Cover and bake 25 minutes or until hot.
  7. Remove cover, sprinkle with remaining mozzarella and bake 5 minutes or until cheese is melted.

Ok, let me be that guy and say I modified this hard. First I used half a head of Cauliflower and made my own "rice" using a food processor. Second, i used less tomato sauce and did 8 oz of sauce...

This was delicious!! I do know that ground turkey doesn't have a lot of flavor, so I added more seasoning than they suggested. I added the Italian Seasoning to the turkey while I was cooking it....

Added quite a bit more Italian seasoning and used marinara sauce instead of tomato.

So Good! Found the riced cauliflower and sweet potato at walmart. Will make again!

I couldn't find the riced cauliflower and sweet potato, so used my own diced sweet potato. The leftovers are perfect lunches at work.
