I've made this recipe four times now and it has rapidly become a household favorite. The seasonings are perfect and the fish comes out moist. My only issue with the recipe as-is is that laying the fish directly in the butter as instructed causes it to cool too rapidly and makes it hard to coat all of the fish. I highly recommend spooning it over the fish or using a pastry brush.
