  1. Mix cabbage, onion, carrot, and chile peppers together in a large bowl. Sprinkle salt evenly on top. Cover with boiling water. Cool to room temperature, about 1 hour.
  2. Pour vinegar over cabbage mixture; add oregano. Mix together carefully.
  3. Cover and refrigerate until flavors combine, 8 hours to overnight.

I was unable to find the fresh chile's but did find them dried. The dried ones didn't have a lot of heat to them after they were reconstituted so I ended up adding crushed red pepper flakes. Thi...

I used red peper flakes and it was a bit too hot so I added 1 tbl of sugar. DELICIOUS!!
