  • Melt butter in a skillet over medium-low heat. Add onions and saute until golden brown, stirring frequently. Continue cooking over medium-low heat until onions turn deeper brown, 35 to 45 minutes. If they start to burn, reduce heat. When completely caramelized, remove skillet from heat.

  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil.

  • Cut a pocket into the side of each chicken breast. Evenly stuff pockets with 1 or 2 slices of Gouda cheese (depending on size of breast) and 1 tablespoon caramelized onions.

  • Place seasoned coating mix in a shallow dish. Evenly dip each chicken breast in coating mix and place on prepared baking sheet.

  • Bake in preheated oven until chicken breasts are no longer pink in the center and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Cook's Note:

To save time prepared caramelized onions can be substituted for yellow onions and butter and the first step can be skipped.

Delicious! Mine took a bit longer to bake (more like 40 minutes). For the coating I used what I had on hand which was a bit of Italian bread crumbs mixed with a bit of panko to which I added a sprinkle of garlic powder to. They turned out so good! I followed the recipe with the exception of the coating and for that I used panko crumbs some of Semigourmet's chicken rub from this site and a few handfuls of the crispy fried onions that come from Costco--but I'm sure any coating including the recipe suggestion would be just fine. Next time I will liberally salt and pepper the chicken before adding the cheese and onions. The onions can be prepared way ahead of time making this an even easier meal to prepare on a busy evening. Rather than splitting the breasts I cut them in half marinaded them in Italian dressing for an hour used Shake and Bake and sandwiched the carmelized onions (which I added some balsamic vinegar) with the gouda. Amazing mix of flavors! Read More
