  1. Melt butter in a skillet over medium-low heat. Add onions and saute until golden brown, stirring frequently. Continue cooking over medium-low heat until onions turn deeper brown, 35 to 45 minutes. If they start to burn, reduce heat. When completely caramelized, remove skillet from heat.
  2. Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil.
  3. Cut a pocket into the side of each chicken breast. Evenly stuff pockets with 1 or 2 slices of Gouda cheese (depending on size of breast) and 1 tablespoon caramelized onions.
  4. Place seasoned coating mix in a shallow dish. Evenly dip each chicken breast in coating mix and place on prepared baking sheet.
  5. Bake in preheated oven until chicken breasts are no longer pink in the center and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Footnotes

  • Cook's Note:
  • To save time prepared caramelized onions can be substituted for yellow onions and butter and the first step can be skipped.

Delicious! I love the Gouda with the caramelized onions. My boyfriend thought it tasted like a twist on Chicken Cordon Bleu. I will definitely make this again!

Fantastic recipe, thanks so much! The caramelized onions and gouda cheese made this taste phenomenal. I used garlic seasoned panko bread crumbs and the flavors blended together perfectly.

Delicious! Mine took a bit longer to bake (more like 40 minutes). For the coating, I used what I had on hand, which was a bit of Italian bread crumbs mixed with a bit of panko, to which I added ...

I followed the recipe with the exception of the coating, and for that I used panko crumbs, some of Semigourmet's chicken rub from this site, and a few handfuls of the crispy fried onions that co...

This was really wonderful. Definitely something different. The onions and cheese had such rich flavor! The only thing I would do differently is to make my own breading, probably with panko and s...

These were so darned delicious. I used large chicken breasts and flattened them just a bit so that I could get more stuffing in them. Instead of plain gouda I used the smoked which paired very ...
