  • Heat oil in a large skillet over medium heat. Add beans and water; mash until soft and heated through, about 5 minutes.

  • Bake in the toaster oven until golden, 2 to 3 minutes. Spread beans on top. Cover with Oaxaca cheese.

  • Bake in the toaster oven until cheese is melted and lightly browned, 5 to 7 minutes. Transfer to a serving platter. Garnish with pico de gallo.

Forget the meetings and unexpected guests make these addicting little things for yourself. I had leftover black beans so I refried them. If you do decide to make these for a meeting company or unexpected guests not to worry they are just as good at room temperature. I'll be making these again maybe with refried pinquito beans and use pepper jack cheese. Read More
