Chef John's Fresh Berry Fool

Rated as 4.67 out of 5 Stars
56k

"While certainly not light on the calorie counter, this berry fool (from the French 'fouler' meaning 'to mash') is shockingly airy on the palate. It's that contrast between the rich, fluffy cream and the syrupy, tangy fruit that makes this so much greater than the sum of its parts. Fresh berries are a classic, but this would work with peeled, diced, ripe peaches."

  1. Place raspberries, blackberries, and strawberries in a bowl. Add lemon zest, lemon juice, and 1/4 cup sugar. Stir until sugar is mixed with fruit and juices begin to form. Cover and refrigerate until chilled, about 1 hour.
  2. Place heavy cream and creme fraiche in a cold bowl. Add 1 tablespoon sugar and vanilla extract. Whisk until mixture has soft peaks and sharp lines, 5 to 8 minutes.
  3. Place some cookie crumbs in the bottom of each serving dish. Spoon in some of the fruit and a layer of whipped cream. Repeat layers, ending with a sprinkle of cookie crumbs.

Footnotes

  • Cook's Note:
  • You can substitute plain yogurt or sour cream for the crème fraiche but, if you do, wait until the whipping cream is almost completely whipped before adding.

I made it just like the recipe called for. It was fantastic. My wife and Daughter loved it.

I liked it, but think I would make it strawberries only and more berries. I also think I will use more sugar and try confectionary sugar.

Everyone loved this! I used more fruit, only 2 T of sugar on the berries, and I accidentally forgot to add the creme fraiche (although I purchased it!). I used 2T of powdered sugar in the whip...
