This is a great way of dressing up chicken in a new way! I played around with ingredients and unexpectedly came across a delicious recipe! It's tangy and savory at the same time, and goes great with any side dish.

Directions

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. Grease with cooking spray.

  • Mix mayonnaise, Dijon mustard, rosemary, garlic powder, salt, and pepper together in a bowl.

  • Season chicken breasts lightly with salt and pepper. Arrange seasoned-side down on the baking sheet. Spread 1/4 of the mayonnaise mixture over each chicken breast with a spatula.

  • Bake in the preheated oven until center is no longer pink and top is lightly browned, about 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Cook's Notes:

Use light mayonnaise if desired.

Substitute dried rosemary for the fresh if desired.

Very tasty and quick and easy to make up in a pinch. I sliced up some sweet potatoes and broccoli and put them on the same tray to the side with rosemary on them. Made for a tasty quick meal. Read More

Dijon Rosemary Chicken Haiku: "Good chicken not great. I like that it was easy quick ingredients." Having everything on hand I reduced the recipe's ingredients to 1 serving or 2 chicken tenderloins for myself for lunch. There was plenty of the mayo mixture to cover the one side of the chicken with the s&p underside as directed in the recipe and the end result was a bit heavy on the slippery texture and a bit light on the flavor. It wasn't bad by all means and it tasted good over a green salad; maybe adding parmesan to the mayo would kick it up some. Read More
