Due to a few inflammatory conditions I suffer from, I am very selective about what I put in my body. I needed a gluten free recipe that would also contain no sugar. I found this one. Since corn is quite inflammatory, I had to substitute almond flour for the corn, but have otherwise followed this recipe exactly. WOW. I love, love, love this coating. I even tried it on fish (a little strange and I probably won't do it again). I also bake the chicken, rather than deep fry. I make double batches and keep it in the freezer so I always have a coating on hand. Thank you for sharing! Read More
