We love what this does to our steak!!! We follow as directed, and grill over very high heat so there is a touch of char on the steak. Then you get the heavy sear, and a nice and juicy steak. If we can't find skirt steak, we have used flank, as well as any cut really. We make this into a rice bowl, with cilantro lime rice and a corn and poblano salsa. Its the perfect meal!
