  • Mash drained salsa and butter together in a bowl. Mix in garlic, orange juice, orange zest, thyme, salt, liquid smoke, and pepper.


Cook's Note:

Substitute 3/4 cup good-quality salsa of your choice for the canned salsa if preferred.

To use the rub, carefully loosen the skin of the turkey and spread the rub underneath with your hands. Place fresh sage leaves on top in any pattern you like.
