  • Spoon 2 tablespoons ice cream into the bottom of an ice pop mold. Pour in root beer to slightly over half-full; top with 1 tablespoon ice cream. Freeze until firm, 8 hours to overnight.

  • Remove ice pop mold from the freezer; add remaining 1 tablespoon of ice cream to the top of the mold. Freeze until firm, 4 to 6 hours.

Cook's Note:

A cola-flavored carbonated beverage such as Coke(R) or Pepsi(R) can be substituted for root beer.

These were fast fun and easy but step 2 didn't make sense to me. Once your popsicles are frozen there is really no way to remove the top to add more ice cream without disturbing the stick which holds the whole thing together. I went ahead and just added the tablespoon of ice cream to to the top prior to freezing and that worked just fine. My husband enjoyed these and it is one I will make again. Read More
