  • Combine pumpkin puree, applesauce, apple juice, and soy milk in a blender; blend until smooth.

Cook's Notes:

I used homemade applesauce that was infused with cinnamon, cardamom, nutmeg, and ginger. You might want to add a pinch of each of these to the smoothie if using store-bought applesauce.

You can use fresh pumpkin puree instead of canned if preferred.

You could also add a little maple syrup to sweeten it up!

1.21.17 I had concerns that the pumpkin would dominate the flavor but it doesn t the pumpkin and apple share equally. We like our smoothies a little icy/slushy so I did add some crushed ice when blending and this smoothie had just the right amount of sweetness for us. Thanks for sharing your recipe. Read More
