To make empanadas: Top each circle of dough with your favorite filling, fold over, and seal edges with a fork. Cut a small slit in the top. Beat 1 egg yolk with 1 tablespoon water in a small bowl and brush over empanadas. Bake on a lightly greased baking sheet at 400 degrees F (200 degrees C) until golden, 20 to 25 minutes.
