  • Mix mashed potatoes, luncheon meat, pancake mix, and eggs together gently in a bowl.

  • Heat oil in a skillet over medium heat. Spoon potato mixture into hot oil and press with a spatula to flatten evenly. Cook, covered, until bottom is crispy, 3 to 5 minutes. Flip and continue cooking until second side is golden and crispy, 3 to 4 minutes more.

Cook's Notes:

Well-seasoned, prepared mashed potatoes are best for good results. There's no need to add salt before frying, the SPAM(R) has enough.

Substitute canola oil for the vegetable oil if desired.

These turned out great! I used leftover mashed potatoes from the night before that were seasoned with green onion, red bell pepper, and cheese. Although I do not make a habit of eating Spam often, this would be great to take out on the boat for those early morning fishing trips. Read More
