  1. Mix mashed potatoes, luncheon meat, pancake mix, and eggs together gently in a bowl.
  2. Heat oil in a skillet over medium heat. Spoon potato mixture into hot oil and press with a spatula to flatten evenly. Cook, covered, until bottom is crispy, 3 to 5 minutes. Flip and continue cooking until second side is golden and crispy, 3 to 4 minutes more.


  • Cook's Notes:
  • Well-seasoned, prepared mashed potatoes are best for good results. There's no need to add salt before frying, the SPAM® has enough.
  • Substitute canola oil for the vegetable oil if desired.

These turned out great! I used leftover mashed potatoes from the night before that were seasoned with green onion, red bell pepper, and cheese. Although I do not make a habit of eating Spam oft...

delish! must try. only thing i did different was cut the recipe in half. 1/2 batch made 12 ice cream scoop sized portions.
