  1. Heat oil in a saucepan over medium-low heat. Add onion and garlic; cook and stir until softened, about 5 minutes. Add rice and mix until clumps form.
  2. Stir water, cilantro, salt, and lemon juice into the saucepan. Simmer uncovered until most of the water has been absorbed, about 10 minutes. Reduce heat, cover, and cook until rice is tender, 10 to 15 minutes.

Footnotes

  • Cook's Note:
  • Substitute lime juice for the lemon juice if desired.

Excellent. Loved the flavor and the cooking method. Turned out perfect. This is my new go to rice! Thanks so much!

I used basmati rice, red onions and quite a bit more than the 3 drops of lemon juice called for in the recipe, and this rice was really good. It paired nicely with the garlic and cheddar chicken...

This rice is fabulous! So easy to make and very flavorful. I paired it with Brazilian Chicken with coconut milk recipe. It was perfect!

I actually decided to make this with Quinoa. It came out delish! Thanks for the recipe!

I liked this rice. It really kept its texture similar to a brown rice. The cook time was perfect. Though, I did soften the onion and garlic on medium and simmered at the temperature before cover...
