  1. Combine grated carrots, celery, onion, and ginger into a large bowl. Stir in sake, soy sauce, mirin, vinegar, orange juice, vegetable oil, lemon juice, sugar, and sesame oil until well combined. Let sit for 1 hour.
  2. Refrigerate dressing until flavors combine, about 2 hours.
