I was messing around in the kitchen one day and thought sake would complement Gorgonzola really well in a sauce. I would suggest topping a dish of pasta primavera with this sauce.

  • Combine sake, butter, and garlic into a saucepan over medium heat. Cook and stir until the mixture has thickened and reduced in volume by one half, about 3 minutes. Add cream to the sake mixture; stir until reduced by one fourth, about 3 minutes. Season with basil, parsley, and salt and pepper.

  • Stir Gorgonzola cheese and Parmesan cheese slowly into the sake mixture; simmer and stir continuously until smooth, about 3 minutes. Simmer until flavors combine, about 5 minutes.

Cook's Note:

Use milk instead of cream for a thinner sauce.

Made as written and while the taste was good the appearance wasn't very appealing. My sauce never did thicken but maybe it wasn't supposed to. I made this as a sauce to dip my ribeye steak in and it went great with that. Next time I will add a little more cheese to get a thicker sauce. Read More
